Creole vs. Cajun Food
Creole food is a traditional style of New Orlean's cooking that blends flavors from French, Spanish, African and American Indian cultures into foods which are traditionally mild in flavor and elaborate to prepare. Creole food is often mistaken for Cajun fare since they both hail from New Orleans, yet both represent a style of cooking as distinct as the culture and people who inspired them. Cajuns prefer their foods hot, spicy, and blackened, while Creoles pride themselves on the rich, subtle flavors found in their sauces, herbs and Creole spices. Both are celebrated for their distinctive cuisine, and have battled for centuries over authorship of some of New Orlean's most notable dishes, such as File' Gumbo, Crayfish, Etoufee' and Jumbalaya. Over time, these two worlds of cooking have become a familiar part of New Orlean's rich cultural heritage, along with jazz, zydeco music and the famous Mardi Gras celebrations. One thing's for sure, both Cajuns and Creoles believe in letting the good times roll. Or as a native New Orleanean might say, "Lassez les bon temps rouler" or... "Let the good times roll!"
